Léna la Bouchère is coming to Martinique
From 21 November to 21 December 2026, 150 m d’altitude hosts Léna Perrin-Manginois, Meilleure Apprentie de France 2024 in charcuterie and catering, for a month-long culinary residency among Martinique’s food trades.

From 21 November to 21 December 2026, 150 m d’altitude hosts Léna Perrin-Manginois for a month-long culinary residency. A butcher and charcutier, Meilleure Apprentie de France 2024 (France’s best apprentice) in charcuterie and catering, she is coming to meet the people who make Martinican cuisine.
A trade, and an audience
Léna is a craftswoman and a content creator. As Léna la Bouchère, she shoots and edits her own videos, followed by more than 100,000 people on TikTok and more than 50,000 on Instagram. Her Chambre de Métiers believes in the project so much that it paid for her plane ticket.
Her mission: to promote her trade and, through it, Martinique as a destination, our local supply chains and our know-how.
December, the month of the pig
She arrives at the high point of Martinique’s culinary year. The programme is taking shape between sea and land: fishing and the fish market, livestock farms, from the small farm to the large operation, the sugar cane and banana museums, the distilleries, restaurateurs and butcher-charcutiers.
And hands-on work: making boudin, preparing the filling for the traditional Christmas pâtés, and pâté en pot, the way we make it here.
A first partner
Le Comptoir des Viandes, the cooperative butcher’s shop of the CODEM, has joined the project: a farm visit, a workshop and time in the butchery are planned with Léna.
To finish, a big neighbourhood lunch
The residency will end with a big neighbourhood lunch, with everyone who wants to be there: a moment of sharing around what we cook here.
Join us
The programme is being finalised right now. Fishers, farmers, craftspeople, restaurateurs, tourism organisations, institutions: now is the time to write to us. We are also looking for a vehicle for a month, a refrigerator and a freezer, and butchery and charcuterie equipment, to be given or lent.
